Inoculating Oak Logs for Shiitake Mushrooms

We started by selecting logs for inoculation.  Oak is best for Shiitake mushrooms.  The mycelium love to "eat" up the sapwood and spread their hyphae.  A mentee is drilling holes to add the spawn.

The final step is to seal the spawn into the logs.  Shiitake spawn is not particularly aggressive.  It is important prevent other, more aggressive mushroom mycelium from entering the log.  We seal all plugs with food quality paraffin.  

The class after a satisfying sessions.  Nine logs inoculated.  Now we wait and keep logs with 40% moisture content.  Next year we will enjoy plucking mushrooms
